Late Plates is when our Chef-walle cook off menu: age-old family recipes, childhood treasures and favourite mouthfuls from the most intimate corners of Bombay. Ever-changing experimentations – limited daily, late-night only.

One month's creations are seldom the next. (Most-loved dishes may make it into future menus.) Come taste plates of uncommon deliciousness – while they last.

LAMB NIHARI WITH KHAMIRI

Lamb-on-the-bone slow-cooked to yielding tenderness with generous spice, for strength and protection against faintness of heart. Scatter plattered garnishes. Mop with pillowiest fermented roti.

BUTTER PEPPER CRAB

Indo-Chinese harmony of delicate white crab meat in salty-sweet oyster sauce with butter-mellowed garlic and pepper. Scoop up and pat down onto slices of toasted pau. A glorious sharing affair.
