Permit Room Mango Lassi Punch

Like the popular fruity-yoghurty Indian drink, with boozier consequences.

A deliciously downable cocktail – one of many populating the knock-out Permit Room cocktail list. Here, inspired by (and named after) the roundly-loved Mango Lassi. Made with creamy-cool yoghurt, spicy mango syrup and Old Monk Rum – a Bombay favourite – for an unexpected but welcome punch.

Permit Room pays homage to the permit rooms of 1970s Bombay, which sprang up after the 1949 Prohibition Act made licences mandatory to get a drink in the city. Within these permitted drinking establishments, liquor was sold and imbibed, strictly ‘for the goodness of one’s health’. Our daru-wallas heartily concur.
Ingredients

4 servings

400 grams Greek yoghurt

160 ml dark rum – ideally, Old Monk

140 ml mango syrup (we suggest Monin's Spicy Mango)

60 ml lemon juice

METHOD

Step 1

Mix ingredients together, waiting to add the lemon juice at the very end.

Step 2

Rest for one hour, then strain the mixture through a paper coffee filter.

Step 3

If the liquid is not completely clear when first straining, pour back through the coffee filter until the drink runs clear.

Step 4

Bottle and keep in the fridge till ready to sip. Serve on the rocks.
